After several months of fermentation in bottle, the Pétillant Naturel lees accumulated at the bottom of the bottles. Similar to the traditional champagne method, we have to disgorge each bottle to remove the lees. Otherwise, you'll end up with a geyser of sparkling wine in your dining room!


To remove the lees: put the bottle upside down, freeze the neck, and open and close really fast!

2018 SF Chronicle Wine Competition

We entered 4 wines at the SF Chronicle Wine Competition, the largest competition in Northern America. Amazingly, all of them won a medal, including a new release, the 2013 Petite Sirah Reserve, and our freshly made Pétillant Naturel that we will be releasing next month. Stay tuned!
