After several months of fermentation in bottle, the Pétillant Naturel lees accumulated at the bottom of the bottles. Similar to the traditional champagne method, we have to disgorge each bottle to remove the lees. Otherwise, you'll end up with a geyser of sparkling wine in your dining room!


To remove the lees: put the bottle upside down, freeze the neck, and open and close really fast!

Double Gold, Best of Class

Our first wine competition was the 2017 Mendocino County Fair Wine Competition. With amazement, we got a Best of Class and Double Gold for our 2015 Petite Sirah, and a Gold for our port. “We had four vintages of Petite Sirah and they were all great!” commented Dan Berger. Powicana Farm, a small 10-acre organic Petite Sirah vineyard from Redwood Valley was awarded the Best of Class in this competitive flight.
